Old Fashioned Pennsylvania Dutch Classic, Homemade, Hand-Me-Down Rcipes

What ever happened to the Old Fashioned Recipes Grandma use to make?
Before the microwave we prepared and baked the old fashioned way we used fresh garden vegetables. We prepared our meals using ingredients and mixing it all together now it's all done for us in prepared dinners we pop into the oven or microwave
But we wont find the old fashion flavor of that home cooked, home baked meal unless we get in and prepare it like Mom &  Grandma use to do. 
Today I want to share a classic I remember my Mom making when I was just a little girl this one was so much fun to eat a real finger food to enjoy while sitting around the pool with some friends.

~Corn Fritters~
3 cups corn kernels, fresh are best or frozen
1 teaspoon salt
1/2 teaspoon granulated sugar (optional) put the sweetness is great!
1/4 teaspoon coarsely ground black pepper
1/2 teaspoon crushed dried basil (optional)
2 large eggs, lightly beaten
2 tablespoons butter or vegetable oil 
Blend all ingredients together, coarsely, in food processor or blender, unless you are using frozen corn in that case, add all other ingredients first or frozen corn will harden and burn out blender's motor. 
Heat butter or oil to medium-high in large heavy skillet and drop batter in by tablespoonsful. Turn over when golden brown. 
Remove from skillet when other side has browned. 
Serve with maple syrup, molasses, or powdered sugar.
 ( I like my corn fritters plain.) 
Yield: 25 to 30 fritters

Love old-fashioned recipes! I was blessed to inherit some of my dad's and my grandmother's recipes - you maed me think of them, should go through them!
